Grandma's Salad Dressings & Sauces


 

TARTAR SAUCE

Combine 2 sieved, hard-cooked egg yolks with 1 to 2 Tablespoons prepared brown mustard and 2 raw egg yolks and mix vigorously until smooth. Mixing constantly (with wire whisk or electric mixer), add 1 cup olive oil or other salad oil in a thin stream until mixture becomes thick and fluffy.

Add 4 finely chopped zesty gherkins, 1/4 cup finely chopped pickled mushrooms, 2 Tablespoons finely chopped capers, 2 finely chopped hard-cooked egg whites, 1 teaspoon chopped parsley, 1 teaspoon chopped chives and salt, pepper, lemon juice, and powdered sugar to taste. 

Fork-blend briefly, chill, and serve. For best results, all ingredients should be at room temperature.
