MAYONNAISE MEAT SCOOPS

Anywhere from 1 to several cups diced, cooked meat can be used in this recipe. This can be leftover pork, veal or beef, poultry, ham or any combination thereof you like.

If diced meat is not highly seasoned, you may want to salt & pepper to taste. To meat add just enough mayonnaise to bind meat together, mix well, and chill 1 hour. 

Use an ice-cream scoop to scoop portions of salad onto lettuce leaves. Spoon a little more mayonnaise over each and garnish with chopped greens of choice.
