Salt 1 1/2 lbs. cleaned smelt and let stand for 1 hour. Drain off any liquid, pat dry, dredge in flour, dip in beaten eggs and beer (1 Tablespoon beer per egg), and roll in mixture of fine bread crumbs and flour.

Fry in hot, fairly deep oil reaching 1/2 inch up the side of skillet, on both sides to a nice golden brown. Serve with cold horseradish sauce, potatoes, and lettuce & radish salad.
